Ingredients list
Making salads excites me because I know I'm going to put so many nourishing ingredients in my body 😍. And this healthy chicken salad is no exception.
- Rocket
- Alfalfa sprouts
- Lebanese cucumber sliced
- Green grapes halved (seedless grapes work best)
- Avocado sliced
- Chicken shredded or diced (you can use cooked leftover chicken or store-bought rotisserie chicken)
- Pepitas
Dressing
- EVOO (extra virgin olive oil)
- Balsamic vinegar
- Wholegrain or dijon mustard
- Salt to taste

Substitutions
- Other leafy greens - instead of rocket, like romaine lettuce, butter lettuce, spinach, or watercress.
- Grilled or poached chicken - instead of roast chicken.
- Different nuts & seeds - like walnuts, pistachios, or sunflower seeds instead of pepitas.
- Other fresh fruit - like pear, apple, or red grapes, instead of green grapes.
- Add fresh herbs - like fresh dill or parsley.
- Throw in more fresh vegetables - like some crisp celery sliced, green onion, red onion, or green bell peppers.
- Get creative with the dressing - make it sweeter using this healthy honey mustard dressing, or substitute the balsamic vinegar for red wine vinegar, apple cider vinegar, or fresh lemon juice.
How to make this green salad with chicken
This salad is super easy to make following some simple steps! I love using roast chicken because it saves the step of having to cook it, but you could use grilled chicken thighs or skinless chicken breasts, or even poached chicken instead!
Lay all the ingredients in a large salad bowl, starting with the rocket, alfalfa, cucumber, and green grapes. Then add the sliced avocado, and roast chicken and spread the pepitas. Add the dressing and enjoy!
Hint: I usually buy store-bought roast chicken because it's super convenient! Buy a quality free-range or organic one if possible. It's worth the extra few dollars!
Storage
Store the leftovers in an airtight container in the fridge for up to 3 days.
If you're preparing ahead or making a big batch to eat throughout the week, don't add the dressing until before you eat it, to avoid the rocket and alfalfa getting soggy. You can store the dressing in a small glass jar, and pour it before eating.
Top tip
Mix the dressing ingredients in a small bowl or glass, and then pour over the salad! Avoid mixing them directly with the rest of the salad ingredients.

Ingredients
- 1 cup of rocket tightly packed
- ⅓ cup of alfalfa sprouts
- ½ Lebanese cucumber sliced
- 6 green grapes halved
- ½ avocado sliced
- 120g of roasted chicken shredded or diced (or substitution - see notes)
- 1 tbsp of pepitas
Dressing
- 2 tbsp of EVOO
- 1 tbsp balsamic vinegar
- 1 tbsp wholegrain or dijon mustard
- Salt to taste
Instructions
