    This simple shredded carrots recipe will elevate your salad game! Tossed in zesty lemon and olive oil dressing, these crunchy shredded carrots bring freshness to your plate in no time! Ideal to prepare ahead for salads, sandwiches, and wraps.

    I love to have veggies ready to go in the fridge. It makes my life so much easier! So, if you have a bunch of carrots in the fridge, this easy carrot salad recipe makes a great side dish, that is fresh and nutritious!

    Ingredients

    All you need to make these shredded carrots are three simple ingredients (plus salt & pepper!):

    • Carrots
    • Extra virgin olive oil
    • Lemon juice
    • Salt
    • Black pepper

    How To Make Shredded Carrots With Lemon Dressing

    Prepare The Carrots

    Peel the carrots using a vegetable peeler. To make the shredding easier, cut them in 2 or 3 chunks (depending on how big they are).

    Sit the bottom of the grater on top of a cutting board (to make it stable). Place the carrot pieces in an angle (to make longer grates of carrot) on the larger hole side of the grater, and grate. Repeat until you've shredded all the carrots.

    Make The Simple Lemon Dressing

    Combine all the dressing ingredients in a small bowl, and stir well with a spoon.

    Dress The Carrots

    Transfer the freshly grated carrots to a big bowl, pour the dressing,  and combine well. 

    Serve with extra black pepper on top.

    Tip! Adjust the amount of dressing as desired! This recipe is made for a very subtle zesty taste, so you can easily combine it with other ingredients and salads.  However, if you are serving this as a side dish, you might want to increase the amount of dressing you add.

    Grated Carrot Salad Substitutions And Variations 

    You can get creative with the ingredients you add to this raw carrot salad 

    • Add some fresh herbs, like parsley
    • Red pepper flakes or chili powder, for a spicy touch
    • Make a dressing with seeded or dijon mustard
    • Add a touch of honey or maple syrup for a sweet taste

    Equipment

    • Vegetable peeler
    • Box grater (you could also use the grating attachment of a food processor) 
    • Knife
    • Chopping board
    • Large bowl
    • Small bowl & spoon (optional to make the dressing separate)

    Storage

    Store the leftover shredded carrot salad in an airtight container in the fridge. You can also reuse an airtight plastic bag, but make sure to reuse it to save waste!

    It will last between 5-7 days in the fridge.

    How Do You Shred Carrots?

    You can either use a conventional grater (be a box grater or flat grater) or the grating attachment of a food processor. Unless you are grating a very large amount, I find it's best to do it by hand, as the cleaning is way easier!

    Yes! You can totally shred carrots ahead of time. It's a great way to be prepared for the week and to have an easy side dish or salad ready to go.

    Ingredients

    • 3-4 carrots (pending size)
    • 2 tbsp of extra virgin olive oil
    • Lemon juice of ¼ lemon
    • Salt to taste
    • Black pepper to taste

    Instructions
