- Start by grilling the chicken breast, and boil the pasta while the chicken cooks. Slice the chicken once it's ready, and drain pasta.
- Cut the cherry tomatoes, olives & artichokes. In a large bowl add all the ingredients, and homemade dressing, and mix well to combine. Voila, it's ready!
Tip: boil the buckwheat pasta gently on medium heat, so it doesn't break apart.

This delicious mediterranean chicken pasta salad is ready in only 15 minutes!! It's super easy to make, packed with nutrients and ideal for meal prep! Gluten-free & dairy-free.
Ingredients
- 2 cups buckwheat spirals
- 250g roast chicken sliced
- 6 canned artichokes cut in 4
- 5 tbsp kalamata olives sliced
- 3 tbsp capers
- 2 cups packed of rocket
- 14 cherry tomatoes halved
- Mustard dressing to taste
Instructions
- Add a drizzle of olive oil to a pan on medium-high heat. Add a bit of salt & pepper to the chicken breast. Grill both sides until the inside is nice & cooked (approx. 10 minutes, depending on how thick it is).
- While the chicken is cooking, bring water to boil on a medium size pot. Pour the buckwheat pasta, and cook following the package instructions.
- Prepare the dressing by mixing equal parts of extra virgin olive oil, apple cider vinegar & seeded mustard.
- Add all the ingredients to a large salad bowl, and mix well to combine.
- Enjoy cold!
