Ingredients
- Rocket
- Alfalfa (optional)
- Cucumber sliced mixed with lemon and salt
- Avocado sliced
- Smoked salmon
- Cherry tomatoes cut in 4
- Capers
- Purple onion sliced
- Mustard dressing to taste (EVOO + apple cider vinegar + dijon mustard)

How to make this easy smoked salmon salad recipe
You don't have to cook any of the ingredients of this salad (double points to it!), only slice a few veggies.
Peel the cucumber, and slice it lengthwise with a peeler. Put it in a plate and add a pinch of salt and lemon juice. Combine with a a couple of spoons and let it rest while you prepare the tomatoes, onion and avocado.
Add the rocket and alfalfa to a large plate. Add the rest of ingredients on top on this order: cucumber, avocado, smoked salmon, tomatoes, capers and onion. Pour the dressing on top and enjoy!
Hint: if you're preparing ahead, don't add the dressing until before you eat it, otherwise the rocket and alfalfa will get soggy.
Substitutions
- Spinach, watercress or lettuce - instead of rocket work well.
- Grilled salmon - instead of smoked salmon.
- Big tomatoes sliced - instead of cherry tomatoes.
- Dressing - it's basic to use EVOO (extra virgin olive oil), but you can use lemon juice or balsamic vinegar instead of apple cider vinegar. The dijon mustard gives a great touch, but you can also change it for whole grain mustard or skip it!

Store the leftovers in an airtight container in the fridge for up to 3 days.

Top tip!!
A good dressing is key for success! Combine the dressing ingredients on a small glass, and mix well with a spoon. The dressing should look uniform before pouring it over the salad.

Ingredients
1 cup tightly packed of rocket
Small bunch of alfalfa (optional)
½ cucumber sliced, mixed with lemon and salt
½ avocado sliced
100g of smoked salmon
5 cherry tomatoes cut in 4
2 tbsp of capers
Purple onion sliced
DRESSING
2 tbsp EVOO (extra virgin olive oil)
1 tbsp apple cider vinegar
½ tbsp dijon mustard
