Description

This delicious quick & easy gluten-free chicken salad with juicy grapes it's a nourishing bomb with the perfect combination of flavors and textures! It is an easy meal that only takes 10 minutes to prepare, and it's perfect for meal prep, lunch, or dinner. Gluten-free & dairy-free.


Ingredients

Units Scale
  • 1 cup of rocket tightly packed
  • 1/3 cup of alfalfa sprouts
  • 1/2 Lebanese cucumber sliced
  • 6 green grapes halved
  • 1/2 avocado sliced
  • 120g of roasted chicken shredded or diced (or substitution - see notes)
  • 1 tbsp of pepitas

Dressing

  • 2 tbsp of EVOO
  • 1 tbsp balsamic vinegar
  • 1 tbsp wholegrain or dijon mustard
  • Salt to taste

Instructions

  1. Lay all the ingredients in a large salad bowl, starting with the rocket, alfalfa, cucumber, and grapes.
  2. Then add the sliced avocado, and roast chicken and spread the pepitas.
  3. Prepare the dressing in a small bowl or glass, and pour over the salad.
  4. Enjoy! 

Notes

  • I love using roast chicken because it saves the step of having to cook it, but you could use grilled or poached chicken instead!
  • Get creative with the dressing - make it sweeter using this healthy honey mustard dressing, or substitute the balsamic vinegar for red wine vinegar, apple cider vinegar, or fresh lemon juice.
  • You can substitute the rocket for other leafy greens like romaine lettuce, butter lettuce, spinach, or watercress.
  • Store the leftovers in an airtight container in the fridge for up to 3 days.
  • If you're preparing ahead or making a big batch to eat throughout the week, don't add the dressing until before you eat it, to avoid the rocket and alfalfa getting soggy. You can store the dressing in a small glass jar, and pour it before eating.
