This delicious quick & easy green salad with chicken it's a nourishing bomb! It only takes 10 minutes to prepare, and it's perfect for meal prep, lunch or dinner. Gluten-free & dairy-free.


Units Scale
  • 1 cup of rocket tightly packed
  • 1/3 cup of alfalfa sprouts
  • 1/2 lebanese cucumber sliced
  • 6 grapes halved
  • 1/2 avocado sliced
  • 120g of roasted chicken (or grilled)
  • 1 tbsp of pepitas


  • 2 tbsp of EVOO
  • 1 tbsp balsamic vinegar
  • 1 tbsp wholegrain mustard
  • Salt to taste


  1. Lay all the ingredients on a large salad bowl, starting with the rocket, alfalfa, cucumber and grapes.
  2. Then add the sliced of avocado, roast chicken and spread the pepitas.
  3. Prepare the dressing in a small bowl or glass, and pour over the salad.
  4. Enjoy! 


  • I love using roast chicken because it saves the step of having to cook it, but you could use grilled or poached chicken instead!
  • You can substitute the rocket for other dark leafy greens like spinach or watercress.
