    This Spanish tuna potato salad is the perfect quick and delicious summer meal. Made with simple ingredients, ready in no time, nourishing and super easy to put together. Gluten-free.

    Spanish tuna potato salad

    This salad is a summer classic at home in Spain. So easy to put together, fresh and absolutely delicious! And my favourite part are the juicy white asparagus, yum! 😍

    Ingredients

    Tuna potato salad ingredients
    • Mixed leaves
    • Potatoes
    • Cherry tomatoes
    • Lebanese cucumber
    • Olives
    • White asparagus cut in half
    • Purple onion
    • Canned tuna
    • Extra virgin olive oil
    • Balsamic vinegar
    • Dried oregano
    • Salt

    How to make tuna and potato salad

    The only ingredient you need to cook for this salad are the potatoes, how good is that?

    Start by boiling the potatoes. If you can, I highly recommend boiling them the day before, so they're cool for the salad. Let them cool, peel, and cut in big-ish chunks.

    Put all the ingredients on a large salad bowl, pour the dressing over, mix to combine and enjoy!!

    How long to boil potatoes for potato salad?

    Boil the potatoes for approx. 20-25 minutes, until you can easily insert a knife through.

    If you want to quicken up the process, boil the potatoes cut in smaller chunks.

    Substitutions

    • Any leafy greens - work well for this salad. I like to use a mix with some crunchy leaves.
    • Add other veggies - like beetroot or carrot.
    • Add pulses - like chickpeas or white beans

    How long does potato salad last in the fridge

    This salad can last up to 3 days in the fridge. Store in an airtight container.

    I highly recommend not adding the dressing until before you eat it, if you're preparing it for meal-prep. This will avoid the leafy greens getting soggy.

    Top tip!

    Boil the potatoes the day before, or a few hours in advance, so they can cool down. This is also super handy, because they'll be ready to go once you want to prepare the salad.

    Cold potatoes have resistant starch which has probiotic properties, meaning they're good for your gut health!

    This Spanish tuna potato salad is the perfect quick and delicious summer meal. Made with simple ingredients, ready in no time, nourishing and super easy to put together. Gluten-free.


    Ingredients

    Scale

    1 cup tightly packed of mixed leafy greens

    1-2 medium potatoes

    5 cherry tomatoes cut in 4

    ⅛ of purple onion thinly sliced

    10 thin slices of cucumber

    Small handful of green olives cut

    4 white asparagus in brine cut in half

    100 gr of canned tuna

    Dried oregano

    Dressing

    2 tbsp of extra virgin olive oil

    1 tbsp of balsamic vinegar

    Pinch of salt


    Instructions

    1. Boil the potatoes in saltwater for 20-25 minutes, until you can easily insert a knife through. Let them cool and peel. Cut in big-ish chunks.
    2. Combine the dressing ingredients in a small glass, and stir well to combine.
    3. Add all the ingredients to a salad bowl, pour the dressing over, a bit of oregano, and mix well to combine.

    Notes

    This salad must be eaten cold.

    This salad can last up to 3 days in the fridge.
