How to make tuna and potato salad
The only ingredient you need to cook for this salad are the potatoes, how good is that?
Start by boiling the potatoes. If you can, I highly recommend boiling them the day before, so they're cool for the salad. Let them cool, peel, and cut in big-ish chunks.
Put all the ingredients on a large salad bowl, pour the dressing over, mix to combine and enjoy!!
How long to boil potatoes for potato salad?
Boil the potatoes for approx. 20-25 minutes, until you can easily insert a knife through.
If you want to quicken up the process, boil the potatoes cut in smaller chunks.

- Any leafy greens - work well for this salad. I like to use a mix with some crunchy leaves.
- Add other veggies - like beetroot or carrot.

1 cup tightly packed of mixed leafy greens
1-2 medium potatoes

⅛ of purple onion thinly sliced
10 thin slices of cucumber
Small handful of green olives cut
4 white asparagus in brine cut in half
100 gr of canned tuna
Dried oregano
Dressing
2 tbsp of extra virgin olive oil
1 tbsp of balsamic vinegar
Pinch of salt
Instructions
- Boil the potatoes in saltwater for 20-25 minutes, until you can easily insert a knife through. Let them cool and peel. Cut in big-ish chunks.
- Combine the dressing ingredients in a small glass, and stir well to combine.
- Add all the ingredients to a salad bowl, pour the dressing over, a bit of oregano, and mix well to combine.
