This recipe is made with simple ingredients that you can easily find at any grocery store:
- Leftover pork (I use my pulled pork which is made with pork butt or pork should and homemade BBQ sauce )
- White rice
- Black beans
- Fresh cilantro
- Purple onion diced
- Lime juice
- Smashed avocado
- Cheddar cheese (DF if dairy-intolerant)
- GF flour tortillas (I use Old El Paso jumbo GF tortillas, I like that they're made with no additives!)
NOTE! The above are my favorite toppings, but feel free to get creative with yours!

Absolutely! Feel free to make this pork burrito recipe with whatever leftover pork you have. If it's not pulled or shredded pork, you can dice the pork to make it easier to eat. If your pork is not very seasoned, add some Mexican spices or this homemade BBQ sauce for extra flavor.
Substitutions and variations
- Another type of rice: like brown rice or Mexican rice
- Add extra flavor or make it spicy: by adding some Mexican spices, chili powder, your favorite salsa, or hot sauce. You can use taco seasoning too, but look out for one with no nasty additives or added sugar!
- Get creative with your favorite toppings: jalapenos, pico de gallo, some crunchy lettuce, red or green chiles, or these delicious roasted bell peppers in the air fryer.
- Use another type of beans: like kidney beans or refried beans

This simple recipe is made with leftover pork, so the prep time is super quick!
Prepare the rice and mashed avocado
Boil or steam the rice. You might want to check this post about how to make steamed rice (don't add the star anise though!).
Prepare the mashed avocado: mash the avocado in a bowl, and add the diced purple onion, chopped cilantro, lime juice, and a pinch of salt. Mix well to combine.
Make the burrito
Warm up the tortilla as per packet instructions so it's easier to fold. Lay the tortilla on a flat surface. Add all the ingredients in the center of each tortilla in the following order: rice, beans, pulled pork, mashed avocado, and shredded cheese.
Tip: Avoid putting the mashed avocado or pulled pork directly on the tortilla, as it will get soggy quickly.
Fold burrito
This can be challenging, let's be honest! But if you follow the steps in the photos below, you will be sweet. Wrap the sides towards the middle. Then wrap the bottom towards the middle. Using your fingers, bring all the filling towards the middle, and fold the tortilla completely.
Tip: you can fold the burrito in foil to make it easier and less messy to eat.
Heat it up baby!
Heat a large skillet or non-stick pan on medium-high heat. Cook the burrito until golden brown on both sides. Enjoy!
Tip: don't overload the burrito, otherwise it might be super difficult to wrap it properly. I know it can be tempting, but trust me here, unless you want to end up with a messy-as burrito 😌
Storage
Burritos are perfect for meal prep! However, I highly recommend (if you can) rolling the burritos before eating, as if you leave them already folded for the next day, the tortilla might end up quite soggy.
I recommend storing all the ingredients in an airtight container in the fridge for up to three days. Bear in mind that the mashed avocado will brown in the fridge.
