    Easy Juicy Pork Burritos With Leftover Pulled Pork

    These pork burritos with leftover pulled pork are filled with super juicy and tender BBQ pulled pork, beans, rice, avocado, and cheese. They're the perfect comfort food that is easy to make and always a winner! Gluten-free.

    These pork burritos are made with my award-winning slow-cooked BBQ pulled pork, it's SO GOOD 🤤I love making a big batch of this pork recipe to eat throughout the week and freeze portions. You can either cook it on the stovetop or make it in the slow cooker. It comes in handy to make burritos, these leftover pulled pork tacos, this easy pulled pork salad, or this pulled pork rice bowl.

    • Filled with super tender and juicy pork, beans, rice, avocado, and cheese, they're a delicious meal and a great way to use your leftover pork (whether that's shredded pork or another type)
    • Ready in no time! Since they're made with leftover pork, this recipe is an easy meal that is super quick to put together, making it a busy days favorite!
    • Gluten-free & dairy-free (using DF cheese, or not using cheese at all)

    Ingredients

    This recipe is made with simple ingredients that you can easily find at any grocery store:

    Pork burritos ingredients on benchtop
    • Leftover pork (I use my pulled pork which is made with pork butt or pork should and homemade BBQ sauce )
    • White rice
    • Black beans
    • Fresh cilantro 
    • Purple onion diced
    • Lime juice
    • Smashed avocado
    • Cheddar cheese (DF if dairy-intolerant)
    • GF flour tortillas (I use Old El Paso jumbo GF tortillas, I like that they're made with no additives!)

    NOTE! The above are my favorite toppings, but feel free to get creative with yours!

    Can I use other meat to make these burritos?

    Absolutely! Feel free to make this pork burrito recipe with whatever leftover pork you have. If it's not pulled or shredded pork, you can dice the pork to make it easier to eat. If your pork is not very seasoned, add some Mexican spices or this homemade BBQ sauce for extra flavor.

    Substitutions and variations

    • Another type of rice: like brown rice or Mexican rice
    • Add extra flavor or make it spicy: by adding some Mexican spices, chili powder, your favorite salsa, or hot sauce. You can use taco seasoning too, but look out for one with no nasty additives or added sugar!
    • Get creative with your favorite toppings: jalapenos, pico de gallo, some crunchy lettuce, red or green chiles, or these delicious roasted bell peppers in the air fryer.
    • Use another type of beans: like kidney beans or refried beans

    How to prepare these leftover pork burritos

    This simple recipe is made with leftover pork, so the prep time is super quick!

    Prepare the rice and mashed avocado

    Mashed avocado with purple onion, lime and cilantro

    Boil or steam the rice. You might want to check this post about how to make steamed rice (don't add the star anise though!). 

    Prepare the mashed avocado: mash the avocado in a bowl, and add the diced purple onion, chopped cilantro, lime juice, and a pinch of salt. Mix well to combine.

    Make the burrito

    Warm up the tortilla as per packet instructions so it's easier to fold. Lay the tortilla on a flat surface. Add all the ingredients in the center of each tortilla in the following order: rice, beans, pulled pork, mashed avocado, and shredded cheese. 

    Tip: Avoid putting the mashed avocado or pulled pork directly on the tortilla, as it will get soggy quickly.

    How to fold pork burrito

    This can be challenging, let's be honest! But if you follow the steps in the photos below, you will be sweet. Wrap the sides towards the middle. Then wrap the bottom towards the middle. Using your fingers, bring all the filling towards the middle, and fold the tortilla completely. 

    Tip: you can fold the burrito in foil to make it easier and less messy to eat.

    Heat it up baby!

    Heat a large skillet or non-stick pan on medium-high heat. Cook the burrito until golden brown on both sides. Enjoy!

    Tip: don't overload the burrito, otherwise it might be super difficult to wrap it properly. I know it can be tempting, but trust me here, unless you want to end up with a messy-as burrito 😌

    Storage

    Burritos are perfect for meal prep! However, I highly recommend (if you can) rolling the burritos before eating, as if you leave them already folded for the next day, the tortilla might end up quite soggy.

    I recommend storing all the ingredients in an airtight container in the fridge for up to three days. Bear in mind that the mashed avocado will brown in the fridge.

    Top tips to make the best pork burritos recipe!

    Don't overload the burrito, otherwise it might be super difficult to wrap it properly. I know it can be tempting, but trust me here, unless you want to end up with a messy-as burrito 😌

    Avoid a soggy tortilla by avoiding putting the mashed avocado or pulled pork directly on the tortilla. These are the wetter ingredients, so it's best to put them in between drier ingredients like rice or cheese.

    You can wrap the burrito in foil, to make it less messy to eat, as the pulled pork can release a lot of juice.

    Making leftover pulled pork burritos is the perfect way to use your leftover pulled pork. Alternatively, you can prepare leftover pulled pork tacos, this easy pulled pork salad, or this pulled pork rice bowl.

    A pork burrito will last in the fridge up to 3-4 days, depending on the ingredients you use. This pork burrito recipe will last fine for three days, however, I recommend storing the filling ingredients separate in an airtight container and rolling the burrito before eating for best results.

    Can you reheat a pork burrito?

    Absolutely! You can reheat a pork burrito in a pan on the stovetop, in the oven or in the microwave. Reheating in the stovetop or oven will give you best results. For the stovetop method, heat for approx. 5 minutes per side, and for the oven method, heat for approx. 10 minutes at 200C/392F.

    Ingredients

    • 1 cup of leftover pork (I use my BBQ Pulled pork)
    • ½ cup of white rice
    • ½ cup of black beans
    • Fresh cilantro
    • ¼ of a purple onion diced
    • Juice of ¼ - ½ lime
    • 1 avocado
    • ⅓ cup of cheddar cheese (DF if dairy-intolerant)
    • 2 big corn tortillas or GF tortilla of choice

    Instructions

    1. Boil or steam the rice: You might want to check this post about how to make steamed rice (don't add the star anise though!).
    2. Prepare the mashed avocado: mash the avocado in a bowl, and add the diced purple onion, chopped cilantro, lime juice, and a pinch of salt. Mix well to combine.
