    Easy Juicy Shredded Beef Burrito Recipe (Gluten-Free)

    This shredded beef burrito is filled with super juicy and tender BBQ beef brisket, beans, rice, avocado and lettuce. SO TASTY!! Perfect comfort food that is easy to make and always a winner. Gluten-free & dairy-free.

    Mexican food... how good is it? Without doubt, one of my favorite things! 🤤

    This pulled beef burrito is made with my pulled BBQ beef brisket, it has so much flavor, and it's the best thing!! You could also make these super tender pulled beef tacos.

    Ingredients

    Shredded beef burrito ingredients on little bowls
    • Pulled beef barbacoa
    • Black beans
    • Romaine lettuce diced
    • White rice boiled or steamed
    • Smashed avo with lime juice and salt
    • Jalapeño peppers chopped
    • Fresh coriander chopped
    • Big corn tortilla (I use these from Old El Paso) or GF flour tortillas of choice
    • OPTIONAL to add some spicy sauce of choice.

    NOTE! The above are my favorite toppings, but feel free to get creative with yours! Green chiles, pico de gallo or your favorite salsa can be great additions too!

    Can I use other meat to make these burritos?

    Absolutely! You can use leftover roast beef or other type of cooked beef, and mix it with this barbecue sauce. You could also cook ground beef with BBQ sauce.

    How to make this juicy shredded beef burrito

    If you don't have the tender beef already made, check this post and make it.

    If you already have it, then you only need to follow a few super simple steps, and the total cooking time is less than 15 minutes!

    Prepare all the ingredients

    Boil or steam the rice. You might want to check this post about how to make steam rice (don't add the star anise though!). Chop the romaine lettuce, jalapeño peppers and coriander, and smash the avo with a bit of lime juice and salt. Heat up the beef either in the microwave or in a pan on medium-high heat on the stove top.

    Make the burrito

    Lay foil on a flat surface and add the tortilla on top. Add all the ingredients on top: start with the avocado, rice and lettuce. Add the beef on top to avoid the tortilla getting soggy. Roll the burrito and wrap it in foil. Optional to heat it up either in a sandwich press or in the stove top, until the tortilla is golden brown.

    How to wrap a burrito

    How to wrap a burrito step 2 Wrap the bottom towards the middle
    How to wrap a burrito step 3 Bring all the filling using your fingers towards the middle, and fold the burrito completely

    This can be challenging, let's be honest! But if you follow the steps on the photos below, you will be sweet. Wrap the sides towards the middle. Then wrap the bottom towards the middle. Using your fingers, bring all the filling towards the middle, and fold the tortilla completely.

    Tip: don't overload the burrito, otherwise it might be super difficult to wrap it properly. I know it can be tempting, but trust me here, unless you want to end up with a messy-as burrito 😌

    Substitutions & variations

    • Kidney beans or refried beans - instead of black beans
    • Spinach or cabbage - instead of lettuce
    • Mayo or sriracha mayo - is a great addition!!
    • Cheese - either dairy-free or with dairy if you don't have intolerance. If you tolerate dairy cheddar cheese works great.
    • Green bell peppers roasted - would work fantastic
    • Other rice - instead of white rice, like brown rice, Mexican red rice, or cauliflower rice if you want to save some carbs!
    • Make burrito bowls - instead of burrito.

    Equipment

    All you need to make this pulled BBQ beef burrito is...

    • Foil paper
    • Pan
    • Small pot to boil the rice
    • Sharp knife and chopping board

    **If you need to make the beef barbacoa from scratch, you will also need a crock pot, dutch oven or large pot. Check recipe here.

    Storage

    Store the leftover beef in a safe container in the fridge. If the beef is just made, it can last up to 5-7 days in the fridge, or 3 months in the freezer.

    Store the veggies, rice and beans in airtight containers, or in bowls covered with wax paper or compostable plastic wrap. Consume within 3 days.

    Ingredients

    1 cup of pulled BBQ beef brisket

    ½ cup of black beans

    ⅓ cup of romaine lettuce diced

    2 big corn tortillas or GF tortilla of choice
