This pulled beef burrito is made with my pulled BBQ beef brisket, so delicious!! You could also make these super tender pulled beef tacos.

Ingredients

- Pulled BBQ beef brisket
- Black beans
- Lettuce diced
- White rice boiled or steamed
- Smashed avo with lime juice and salt
- Jalapenos chopped
- Coriander chopped
- Big corn tortilla (I use these from Old El Paso) or GF tortilla of choice
- OPTIONAL to add some spicy sauce of choice

How to make this juicy shredded beef burrito
If you don't have the pulled beef already made, check this post and make it.
If you already have it, then you only need to follow a few super simple steps!
PREPARE ALL THE INGREDIENTS
Boil or steam the rice. You might want to check this post about how to make steam rice (don't add the star anise though!). Chop the lettuce, jalapenos and coriander, and smash the avo with a bit of lime juice and salt. Heat up the beef either in the microwave or in a pan on the stove.
MAKE THE BURRITO

Lay foil on a flat surface and add the tortilla on top. Add all the ingredients on top: start with the avocado, rice and lettuce. Add the beef on top to avoid the tortilla getting soggy. Roll the burrito and wrap it in foil. Optional to heat it up either in a sandwich press or in the stove.
HOW TO WRAP A BURRITO
This can be challenging, let's be honest! But if you follow the steps on the photos below, you will be sweet. Wrap the sides towards the middle. Then wrap the bottom towards the middle. Using your fingers, bring all the filling towards the middle, and fold the tortilla completely.



Tip: don't overload the burrito, otherwise it might be super difficult to wrap it properly. I know it can be tempting, but trust me here, unless you want to end up with a messy-as burrito 😌

- Kidney beans - instead of black beans
- Spinach or cabbage - instead of lettuce
- Mayo or sriracha mayo - is a great addition!!
- Cheese - either dairy-free or with dairy if you don't have intolerance
- Roast capsicum - would work fantastic
