Description
These easy pork burritos with leftover pulled pork are filled with super juicy and tender BBQ pulled pork, beans, rice, avocado, and cheese. They're the perfect comfort food that is easy to make and always a winner! Gluten-free.
Ingredients
- 1 cup of leftover pork (I use my BBQ Pulled pork)
- 1/2 cup of white rice
- 1/2 cup of black beans
- Fresh cilantro
- 1/4 of a purple onion diced
- Juice of 1/4 - 1/2 lime
- 1 avocado
- 1/3 cup of cheddar cheese (DF if dairy-intolerant)
- 2 big corn tortillas or GF tortilla of choice
Instructions
- Boil or steam the rice: You might want to check this post about how to make steamed rice (don't add the star anise though!).
- Prepare the mashed avocado: mash the avocado in a bowl, and add the diced purple onion, chopped cilantro, lime juice, and a pinch of salt. Mix well to combine.
- Make the burrito: Warm up the tortilla as per packet instructions so it's easier to fold. Lay the tortilla on a flat surface. Add all the ingredients in the center of each tortilla in the following order: rice, beans, pulled pork, mashed avocado, and shredded cheese.
- Fold burrito: Wrap the sides towards the middle. Then wrap the bottom towards the middle. Using your fingers, bring all the filling towards the middle, and roll to fold the tortilla completely.
- Heat up: Heat a large skillet or non-stick pan on medium-high heat. Heat the burrito until golden brown on both sides.
Notes
Use any type of leftover pork: Feel free to make this pork burrito recipe with whatever leftover pork you have. If it's not pulled or shredded pork, you can dice the pork to make it easier to eat. If your pork is not very seasoned, add some Mexican spices or this homemade BBQ sauce for extra flavor.
Get creative with your favorite toppings: jalapenos, pico de gallo, some crunchy lettuce, or these delicious roasted bell peppers in the air fryer.
Use another type of beans: like kidney beans or refried beans
Tip: you can fold the burrito in foil to make it easier and less messy to eat.
Tip: don't overload the burrito, otherwise it might be super difficult to wrap it properly. I know it can be tempting, but trust me here, unless you want to end up with a messy-as burrito 😌
Storage: I recommend storing all the ingredients in an airtight container in the fridge for up to three days.
