    These leftover pulled pork tacos are so delicious and quick to make! Always a favourite between family and friends. Gluten-free & dairy-free.

    Leftover BBQ pulled pork tacos

    I am everything tacos 🤩 They are such a tasty dish that I could never get bored of.

    I always make this taco recipe with my BBQ pulled pork recipe, and they come out so flavourful and tender. You could also use this pulled BBQ beef brisket instead. For more taco inspo, you might also want to check my easy jackfruit taco recipe.

    Ingredients

    BBQ Pulled pork tacos ingredients on bowls
    • Purple cabbage thinly sliced
    • Carrot grated
    • Lime juice
    • Extra virgin olive oil
    • Ground pepper
    • Salt
    • Lettuce (optional)
    • Pulled pork 
    • Avocado mashed (optional to add some lime juice to it)
    • Onion pickles
    • Sriracha mayo (mayonnaise + sriracha)
    • Fresh coriander
    • Lime wedges
    • Corn tortillas (or tortillas of choice)

    How to make these BBQ pulled pork tacos

    Since these tacos are made with leftover pulled pork, they are ready in no time!

    Start by preparing the coleslaw. Combine the cabbage with the carrot, add the lime juice, drizzle of olive oil, ground pepper and a pinch of salt.

    Mash the avo and add a bit of lime juice and pinch of salt.

    Heat up the pulled pork either on a pan or in the microwave.

    Heat up the tortillas, either directly on the stove or in the microwave as per packet instructions. Check out this video to learn how to heat up tortillas on the stove.

    Make the tacos, add the mashed avo, coleslaw, pulled pork, sriracha, onion pickles and enjoy!!

    The sky is the limit with the toppings you can add! I love all the toppings above, but feel free to play around with what you have at home.

    Substitutions & variations

    • Add other toppings – like jalapenos or roast capsicum.
    • Make them hot – adding more sriracha to the sriracha mayo, or adding spicy sauce directly to the tacos!
    • Can't be bothered making coleslaw? Add some chopped lettuce only!

    These leftover pulled pork tacos are so delicious and quick to make! Always a favourite between family and friends. Gluten-free & dairy-free.


    Ingredients

    Scale

    Coleslaw

    ¼ purple cabbage thinly sliced

    3-4 medium carrots grated

    Juice of 1 lime

    ¼ tsp of ground pepper

    Pinch of salt

    Rest of ingredients

    1 handful of crunchy lettuce (optional)

    250 grams of pulled pork

    ½ avocado mashed (optional to add some lime juice to it)

    Onion pickles

    Sriracha mayo (3 tablespoon mayonnaise + 2 teaspoon sriracha)

    Fresh coriander

    Lime wedges

    8x corn tortillas (or tortillas of choice)


    Instructions

    1. Start by preparing the coleslaw. Combine the cabbage with the carrot, add the lime juice, ground pepper and a pinch of salt.
    2. Mash the avo and add a bit of lime juice and pinch of salt.
    3. Heat up the pulled pork either on a pan or in the microwave.

    5. Make the tacos, add the mashed avo, coleslaw, lettuce (optional) pulled pork, sriracha mayo, onion pickles, fresh coriander. Optional to add lime wedges to decorate as well.
    6. Enjoy!!

    Notes

    You will probably end up with quite a bit of leftover coleslaw. I find it's a very handy salad base to have already made. You can use it to make other dishes like this pulled pork rice bowl, or pulled pork tacos.

    Play around with the toppings, and get creative with whatever you have in your fridge or pantry!
