As much as I love cooking, raw salads are a lifesaver to stay away from the stove during hot summer days!
This salad is loaded with delicious Mediterranean ingredients. Like my Mediterranean chicken pasta salad or my Mediterranean butter beans salad.

Ingredients
This fresh Mediterranean salad with mango it's made with simple ingredients!
- Cucumber finely sliced
- Green capsicum finely sliced
- Purple onion finely sliced
- Cherry tomatoes halved
- Mango diced in cubes (approx. 1 cm)
- Salt to taste
- Parsley chopped
- Balsamic vinegar + extra virgin olive oil (EVOO) dressing

How to make this fresh mediterranean salad
This salad required minimum effort!
Prepare all the ingredients and add to a large salad bowl. Combine and enjoy!
Hint: feel free to play around with the shape of the veggies. I like to slice them, but you could cut them in small chunks instead 😊

Storage
Store the leftovers in the fridge for up to 2-3 days.
If you are preparing ahead, don’t add the dressing until before you eat it. Otherwise the veggies (especially the cucumber), will get soggy.

- 1 green capsicum finely sliced
- ¼ purple onion finely sliced
- 1 large bunch of cherry tomatoes halved
- ½ mango diced in cubes (approx. 1 cm)
- Salt to taste
- 1 tbsp of parsley chopped
- Balsamic vinegar + extra virgin olive oil (EVOO) dressing
