How to make perfect Spanish Gazpacho
Gazpacho is super easy to prepare!
- Prepare all the ingredients and put in a large pot to macerate for 1 hour.
- Transfer all the ingredients to a high speed blender, and blend until smooth.
- Let it cool in the fridge in a glass jar (overnight is best).
- Serve very cold in a glass or have it in a soup bowl with crushed pepper and toppings!
Top tips to make the best authentic Spanish Gazpacho!
Pick your tomatoes carefully, they are the base of this recipe!! Look for quality juicy and ripe tomatoes. If you want to make the perfect gazpacho recipe and you can't find good quality tomatoes, don't bother making it, as it won't be as tasty as it has to be!
Go easy with the onion, my recipe includes ⅓ of a medium size onion. If you are unsure, go for less rather than more.
Use quality extra virgin olive oil, as a good Spanish person, this is a sacred ingredient!
Be patient and let all the ingredients macerate for 1 hour before blending. This waiting time is critical to extract all the juices and obtain the best flavour. Trust me it's so worth it!!
Blend, blend and keep blending! You can do this, it's the final step! Gazpacho has to be smooth, so it's very important to blend all the ingredients until smooth.
Let it cool (overnight is best) and serve it very cold! Sometimes we would even put an ice cube in it to make it even colder!

How to serve the authentic Spanish Gazpacho
The great thing about gazpacho is that you can serve it in different ways and get creative with the toppings!
Enjoy in a glass, with a bit of pepper on top.
Serve in a soup bowl with toppings. My favourites are: diced cucumber, cherry tomatoes, sunflower seeds and pepitas.
Make it a light main course by adding a diced boiled egg on top. You can also serve it with bread crumbs on top.
Enjoy out of the bottle at the beach! When is that time of the year (summertime baby!) gazpacho is the most refreshing food to have at the beach! Make sure you keep it cool in an esky or cooler bag.
