    AUTHENTIC SPANISH GAZPACHO

    Nothing beats a good authentic Spanish gazpacho, recipe from my mum! Refreshing, nourishing and absolutely delicious! Ready in 15 minutes + resting time, this is going to be your new favourite summer soup!

    Authentic spanish gazpacho

    If you've made my chilled creamy cucumber soup, you know I am a big fan of cold soups in summer, but gazpacho is by far my favourite!!

    Things I could have in summer everyday: gazpacho, gazpacho and... more gazpacho please! As a good Spaniard, I could never get bored of drinking gazpacho, seriously, it's too good!

    TIPS TO MAKE THE BEST AUTHENTIC SPANISH GAZPACHO

    Pick your tomatoes carefully, they are the base of this recipe!! Look for quality juicy and ripe tomatoes. If you can't find good quality tomatoes, don't bother making it, as it won't be as tasty as it has to be!

    Go easy with the onion, my recipe includes โ…“ of a medium size onion. If you are unsure, go for less rather than more.

    Use quality extra virgin olive oil, as a good Spanish person, this is a sacred ingredient!

    Be patient and let all the ingredients macerate for 1 hour before blending. This waiting time is critical to extract all the juices and obtain the best flavour. Trust me it's so worth it!!

    Blend, blend and keep blending! You can do this, it's the final step! Gazpacho has to be smooth, so it's very important to blend all the ingredients until smooth.

    Let it cool (overnight is best) and serve it very cold! Sometimes we would even put an ice cube in it to make it even colder!

    HOW TO SERVE THE AUTHENTIC SPANISH GAZPACHO

    The great thing about gazpacho is that you can serve it in different ways and get creative with the toppings!

    Enjoy in a glass, with a bit of pepper on top.

    Serve in a soup bowl with toppings. My favourites are: diced cucumber, cherry tomatoes, sunflower seeds and pepitas.

    Make it a complete meal adding a diced boiled egg on top.

    Enjoy out of the bottle at the beach! Make sure you keep it cool in an esky or cooler bag.

    Ingredients

    Units Scale

    1.5 kg ripe and juicy tomatoes diced

    โ…“ medium brown onion diced

    1 green capsicum diced

    1 large lebanese cucumber diced

    ยฝ red apple diced

    2 small garlic cloves diced

    3 tablespoons apple cider vinegar

    โ…” cup extra virgin olive oil

    1 ยฝ teaspoonsย  salt


    Instructions

    1. Prepare all the ingredients and put in a large pot to macerate for 1 hour.
    2. Transfer all the ingredients to a high speed blender, and blend until smooth.
    3. Let it cool in the fridge in a glass jar (overnight is best).
    4. Serve very cold in a glass or have it in a soup bowl with crushed pepper and toppings!

    Notes

    • Ripe & juicy tomatoes are essential for success!
    • Store in a glass jar in the fridge for up to 5 days
    • Put an ice cube in it to make it extra cold when serving it
