This vegan fresh Mediterranean salad with mango, it’s so easy, quick and delicious!! It literally takes 5 minutes to prepare and makes the perfect low carb dish for summer days!


  • 1 large cucumber finely sliced
  • 1 green capsicum finely sliced
  • 1/4 purple onion finely sliced
  • 1 large bunch of cherry tomatoes halved
  • 1/2 mango diced in cubes (approx. 1 cm)
  • Salt to taste
  • 1 tbsp of parsley chopped
  • Balsamic vinegar + extra virgin olive oil (EVOO) dressing


  1. Prepare all the ingredients and add to a large salad bowl. Combine and enjoy!


  • Feel free to play around with the shape of the veggies. I like to slice them, but you could cut them in small chunks instead.
  • If you are preparing ahead, don’t add the dressing until before you eat it. Otherwise the veggies (especially the cucumber), will get soggy.
