There are different varieties of dates, so feel free to use your favorite ones! I like to use regular dates, because they are very affordable. However, large medjool dates work fantastic as well!
How to make chocolate covered dates
Making these healthy sweet treats couldn't be easier!!
1 - Start by stuffing the dates
Open the dates (remove the pit from the center of the date if required) and, using a small spoon, stuff them with the nut butter. Be generous with the amount!! Don't worry, they don't need to be fully closed - see photo below.
2 - Melt the chocolate and dip the dates
Use the double boiler method to melt the chocolate (see FAQ’s below), and transfer the melted chocolate to a small bowl. Grab the filled dates with a small fork or toothpick, and dip the stuffed dates into the chocolate (get rid of the excess chocolate).
3 - Lay them on baking paper
Place the chocolate dates on top of a piece of parchment paper over a flat surface (benchtop or chopping board), and sprinkle some shredded coconut or your favourite topping, on top of the dates (this is optional). Let them cool in the fridge until the chocolate is solid.
Hint: you can get creative with the toppings! You could sprinkle sesame seeds or flaky sea salt as well!
