Description
These easy chocolate covered dates made with only three ingredients couldn't more delicious! Ready in no time, perfect for a snack or bite-size dessert. Kids love them!
Ingredients
14 dates
150g dark chocolate (min 70%)
Nut butter of choice (I use cashew-coconut)
Optional toppings: shredded coconut, flaky sea salt, sesame seeds
Instructions
- Start by stuffing the dates: Open the dates (remove the pit if required) and, using a small spoon, stuff them with the nut butter. Be generous with the amount!!
- Melt the chocolate and dip the dates: Use the double boiler method to melt the chocolate (see FAQ’s), and transfer to a small bowl. Grab the dates with a small fork or toothpick, and dip the stuffed dates into the chocolate (get rid of the excess chocolate).
- Lay them on baking paper: Place the chocolate covered dates on top of baking paper over a flat surface, and sprinkle some shredded coconut, flaky sea salt or sesame seeds on top (this is optional).
- Let them cool in the fridge until the chocolate is solid & enjoy!
Notes
All the ingredients are long-lasting, so these goodies last for ages! Chocolate covered dates can last up to 3 weeks, but I'm sure you will eat them way quicker 😋.
Store in an airtight container the fridge if it's summer (otherwise the chocolate might melt) or outside at room temperature.
Be generous with the amount of nut butter you put inside each date!! Don't worry at all if you can't close the dates, they will be all covered in chocolate anyway 😊
