These chocolate covered dates are stuffed with your favourite nut butter, and made with only three ingredients. They couldn't be easier to make and more delicious! Ready in no time, vegan, and perfect for a snack or bite-size dessert. Kids love them!

Ingredients
All you need to make these chocolate covered dates are three ingredients, the fourth one is completely optional!
- Dark chocolate (min. 70%)
- Pitted dates or pitted medjool dates
- Nut butter (I use cashew-coconut)
- Optional to sprinkle shredded coconut on top

How to make chocolate covered dates
Making these healthy sweet treats couldn't be easier!!
1 - Start by stuffing the dates
Open the dates (remove the pit if required) and, using a small spoon, stuff them with the nut butter. Be generous with the amount!! Don't worry, they don't need to be fully closed - see photo below.

2 - Melt the chocolate and dip the dates
Use the double boiler method to melt the chocolate (see FAQ’s below), and transfer to a small bowl. Grab the dates with a small fork or toothpick, and dip the stuffed dates into the chocolate (get rid of the excess chocolate).
3 - Lay them on baking paper
Place the chocolate covered dates on top of baking paper over a flat surface, and sprinkle some shredded coconut on top (this is optional). Let them cool in the fridge until the chocolate is solid.

Hint: you can get creative with the toppings! You could sprinkle sesame seeds or sea salt flakes as well!
Substitutions
- Add crushed nuts - as part of the stuffing, for a crunch! Almonds, cashews or macadamias would work great.
- Sprinkle sea salt flakes - on top. The combo of dark chocolate and salt is amazing!
- Use medjool dates - instead of normal dates. I like to use dates because they're way cheaper!

How long do chocolate covered dates last
All the ingredients are long-lasting, so these goodies last for ages! Chocolate covered dates can last up to 3 weeks, but I'm sure you will eat them way quicker 😋.
Store in an airtight container in the fridge or at room temperature. I recommend storing in the fridge if it's summer (otherwise the chocolate might melt).
Top tip to make the best chocolate covered dates!
Be generous with the amount of nut butter you put inside each date!! Don't worry at all if you can't close the dates, they will be all covered in chocolate anyway 😊
FAQ
Yes! Dark chocolate is made without milk.
You need two pots, one slightly bigger than the other, so the smaller fits inside. Add a bit of water to the bigger pot and bring it to boil. Put the smaller pot inside the bigger one, and put the chocolate inside. Stir occasionally until it melts completely.
I always recommend using this method as it’s the best to not burn the chocolate.
