I love using coconut yogurt chia pudding as a base, like in my coconut chia pudding bowl. The chia seeds contain plant based protein and healthy fats, making you feel full for longer!

Having this papaya breakfast bowl (or papaya boat) will make you start your day in a good mood. I mean, it's impossible not to, look at it! Scoop the papaya with the yummy toppings, and leave only the skin.
Ingredients list
- Papaya halved with seeds removed
- Coconut yogurt chia pudding
- Raspberries
- Red currants
- GF granola (like my turmeric buckwheat granola)
- Nut butter (I use almond)
- Shredded coconut
- Hemp seeds

How to make papaya breakfast bowl
This is one of those recipes that looks stunning and is super easy to make, shhh!! Everybody will be amazed by how beautiful it looks, and of course, how good it tastes!
Start by preparing the coconut chia pudding.
Then half the papaya and remove the seeds with a spoon. Add the coconut chia pudding, to fill the void where the seeds were.
Put the toppings, starting with the granola, raspberries, red currants, nut butter, shredded coconut and hemp seeds.
Hint: get creative with the toppings and throw whatever you have in the fridge and pantry!
Substitutions & variations
- Coconut or any plant based yogurt - instead of coconut yogurt chia pudding.
- Fruits - strawberries, blackberries or blueberries would work great as well.
- Nuts & seeds - throw any toppings you have in your pantry and get creative (cacao nibs, sesame seeds, cashews...). These crispy coconut flakes work great too!
- A drizzle of maple syrup or honey - adds a delicious sweet touch.
Storage
Store the leftovers in an airtight container in the fridge for up to 3 days. Preferably store without the granola, as it will get soggy.

Approx ½ cup of coconut yogurt chia pudding
5-6 raspberries
2-3 red currants vines
¼ cup of GF granola (like my turmeric buckwheat granola)
1 tbsp of nut butter (I use almond)
½ tbsp of shredded coconut
½ tbsp of hemp seeds
Instructions
