Description
This delicious papaya breakfast bowl with yogurt chia pudding, it's a dreamy breakfast and a super original way to eat your papaya! It looks gorgeous and it's super healthy, tasty & fresh! Vegan & gluten-free.
Ingredients

1/2 medium size papaya with seeds removed
Approx 1/2 cup of coconut yogurt chia pudding
5-6 raspberries
2-3 red currants vines
1/4 cup of GF granola (like my turmeric buckwheat granola)
1 tbsp of nut butter (I use almond)
1/2 tbsp of shredded coconut
1/2 tbsp of hemp seeds
Instructions
- Start by preparing the coconut chia pudding.
- Half the papaya and remove the seeds with a spoon. Add the coconut chia pudding, to fill the void where the seeds were.
- Put the toppings, starting with the granola, raspberries, currants, nut butter, shredded coconut and hemp seeds.
- Scoop the papaya with the toppings on top, and leave only the skin!
Notes
- Use any plant based yogurt instead of coconut yogurt chia pudding.
- Get creative with the toppings and throw whatever fruits, nuts & seeds you have in your pantry (cacao nibs, sesame seeds, cashews...)
