Description

This delicious papaya breakfast bowl with yogurt chia pudding, it's a dreamy breakfast and a super original way to eat your papaya! It looks gorgeous and it's super healthy, tasty & fresh! Vegan & gluten-free.


Ingredients

Scale

1/2 medium size papaya with seeds removed

Approx 1/2 cup of coconut yogurt chia pudding

5-6 raspberries

2-3 red currants vines

1/4 cup of GF granola (like my turmeric buckwheat granola)

1 tbsp of nut butter (I use almond)

1/2 tbsp of shredded coconut

1/2 tbsp of hemp seeds


Instructions

  1. Start by preparing the coconut chia pudding.
  2. Half the papaya and remove the seeds with a spoon. Add the coconut chia pudding, to fill the void where the seeds were.
  3. Put the toppings, starting with the granola, raspberries, currants, nut butter, shredded coconut and hemp seeds.
  4. Scoop the papaya with the toppings on top, and leave only the skin!

Notes

  • Use any plant based yogurt instead of coconut yogurt chia pudding.
  • Get creative with the toppings and throw whatever fruits, nuts & seeds you have in your pantry (cacao nibs, sesame seeds, cashews...)
