Mediterranean Chicken Pasta Salad (Gluten-Free)

Description

This delicious mediterranean chicken pasta salad is ready in only 15 minutes!! It's super easy to make, packed with nutrients and ideal for meal prep! Gluten-free & dairy-free.


Ingredients

Scale
  • 2 cups buckwheat spirals
  • 250g roast chicken sliced
  • 6 canned artichokes cut in 4
  • 5 tbsp kalamata olives sliced
  • 3 tbsp capers
  • 2 cups packed of rocket
  • 14 cherry tomatoes halved
  • Mustard dressing to taste

Instructions

  1. Add a drizzle of olive oil to a pan on medium-high heat. Add a bit of salt & pepper to the chicken breast. Grill both sides until the inside is nice & cooked (approx. 10 minutes, depending on how thick it is).
  2. While the chicken is cooking, bring water to boil on a medium size pot. Pour the buckwheat pasta, and cook following the package instructions. 
  3. Prepare the dressing by mixing equal parts of extra virgin olive oil, apple cider vinegar & seeded mustard.
  4. Add all the ingredients to a large salad bowl, and mix well to combine.
  5. Enjoy cold!

Notes

  • You can use rotisserie chicken instead of grilled chicken.
  • You can substitute the rocket for other dark, leafy greens.
  • Other olives like green olives or gaeta black olives work great too!
  • Get creative and add other fresh veggies like fresh cucumber or red bell pepper.
  • Store the salad in an airtight container in the fridge for up to 3 days.

    If you're cooking a big amount for meal prep, don't add the dressing until before you eat it! Otherwise the rocket will get soggy.
