    These are the easiest jackfruit tacos, ready in 10 minutes! With a pulled-meat like texture, they are super tasty and always a favourite. Gluten-free, dairy-free & vegan.

    I am an everyday-tacos-person. I could never get bored of them, and I reckon you can probably relate to this! 😋

    Tacos are always a family or dinner party favourite. And if you make them easy... even better! This recipe pairs great with my easy mango salsa recipe. It adds texture and fresh flavours.

    Ingredients

    This jackfruit taco recipe is made with the following ingredients:

    • Corn tortillas or GF tortillas of choice
    • Canned young jackfruit
    • Mexican spices
    • Mexican salsa of choice (I used mild salsa picante from Byron Bay Chilli Co)
    • Avocado mashed
    • Coriander chopped
    • Mango salsa (optional)
    • Green leaves diced (optional)
    • Lime wedges

    How to make jackfruit tacos

    This recipe is called "the easiest jackfruit tacos" for a reason! It literally takes a few minutes to put together and anyone without cooking skills can do it!

    Pour a drizzle of olive oil to a pan on high heat. Add the jackfruit (drained) and pull apart using a spatula. Add the mexican spices and mexican salsa, and combine with the jackfruit. Cook for 4 minutes, stirring occasionally.

    Make the tacos - smash a bit of avo directly on the tortilla, add the green leaves, jackfruit, mango salsa and coriander on top. Squeeze a bit of lime & enjoy!

    Tip - play around with the add ons. The mango salsa and the green leaves are completely optional! Check what you have at home and get creative.

    How to cook corn tortillas

    My favourite way to cook corn tortillas is directly on the gas stove (low heat a few seconds either side). It's super quick and easy. They come out perfectly and a bit crispy! If you don't have a gas stove, you can heat them up in the microwave or on the pan.

    Substitutions & variations

    We all know how sometimes it's good to just use whatever you have in the fridge & pantry to whip up a recipe! So here you are a few substitutions:

    • Tomato sauce - instead of mexican salsa. Add more mexican spices to add more flavour. If time allows, some stir fried onion and capsicum would go well as well.
    • Store-bought flavoured jackfruit - instead of raw (you won't need any spices or mexican salsa).
    • Sliced cabbage - instead of green leaves.
    • Guacamole - instead of avocado / mango salsa.
    • Drizzle of Kelpi mayo - is always a good choice!

    Equipment

    All you need to make these jackfruit tacos is...

    • Chopping board & knife (to make the mango salsa)
    • Pan & spatula
    • Spoon or fork to mash the avo

    Storage

    If you have leftover cooked jackfruit, store in an airtight container in the fridge for up to 3-5 days.

    If you have leftover mango salsa, store in an airtight container in the fridge for up to 3 days.

    Store all the ingredients separate.

    Top tip to make the best jackfruit tacos!

    The key of this recipe is to choose a good mexican salsa and be generous with the amount, as it will be the main source of flavour for the jackfruit. I like the Byron Bay Chili Co because it has generous pieces of capsicum and onion, and so much flavour!

    Pull apart the jackfruit until it looks like shredded meat, to make sure it soaks up all the salsa while cooking on the pan.

    FAQ

    How do you make jackfruit tacos taste like meat?

    The shredded texture of the jackfruit is very similar to the texture of shredded meat. By cooking it with the mexican salsa, it absorbs a lot of flavour (the longer you cook it the more it absorbs), resulting in a very meat-like taste.

    Can canned jackfruit be eaten raw?

    YES! I always eat a piece while cooking this recipe. It doesn't have much flavour at all though.

    Is jackfruit healthier than meat?

    Jackfruit is a good source of fiber, vitamin C and potassium, but overall it has a very different nutrition profile than meat. Compared to meat, it lacks protein and iron.

    Ingredients

    6x corn tortillas (or GF tortillas of choice)

    Mango salsa

    ½ avocado

    1 teaspoon of mexican spices

    ⅓ cup of mexican salsa of choice

    ⅓ cup of green leaves chopped

    1 can young jackfruit (400g/225 drained)

    6x lime wedges

    Coriander chopped


    Instructions

    1. Pour a drizzle of olive oil to a pan on high heat. Add the jackfruit (drained) and pull apart using a spatula.

    2. Add the mexican spices and mexican salsa, and combine with the jackfruit. Cook for 4 minutes stirring occasionally.

    3. Heat up the tortillas as per packet instructions.
    4. Make the tacos - smash a bit avo directly on the tortilla, add the green leaves, jackfruit, mango salsa and coriander on top.

    5. Squeeze a bit of lime & enjoy!
