How to prepare this Chilled Creamy Cucumber Soup
This cold cucumber soup recipe is super easy & quick to prepare. It is made with raw ingredients, all you need is 10 minutes to prepare and a blender.
- Chop the fresh cucumbers, onion & celery. Since they're going into the blender there is no need to finely dice them, however thinly sliced cucumbers will allow for more space in the blender.
- Peel the garlic & ginger.
- Put all the ingredients into the blender & blend until smooth. You don't have a big blender? No problem at all! I make this soup in my nutribullet all the time! Blend the ingredients in batches and mix in a large bowl afterwards (the result will be exactly the same). You could also use a immersion blender instead.
- Refrigerate in a glass jar overnight for optimal taste.
Why you will love this chilled cucumber soup!
Whether it is as a refreshing appetizer or main course, I am confident you will love this cold soup! It is refreshing, super tasty, and also light while filling. Green ingredients power that will make your skin glow!
Packed with vitamins, minerals and antioxidants (cucumber, celery, lime, ginger, garlic, onion and mint), healthy fats (avocado and coconut milk) and has a high water content.
If you want to make a hearty meal use toppings, to add protein and texture. My favourites are: pumpkin seeds, flax seeds & sunflower seeds. A boiled egg is great addition if you're not vegan.
Only takes 10 minutes to prepare and you can store it in a glass jar for up to 5 days in the fridge.
Tips & substitutions
Adjust the thickness of this soup by playing around with the amount of avocado. I find half medium avocado gives the perfect balance between too liquid and too thick but it's a matter of personal preference.
Don't love coconut milk? No worries because there is a great alternative if you're not dairy intolerant, which is greek yogurt. Bear in mind greek yogurt is a lot thicker and therefore the texture of the soup will be thicker too.
Use basil instead of mint. Both work amazingly well!
Store this creamy cucumber soup in an airtight container in the fridge for up to 3-5 days. You can also store in glass jars to have individual portions ready to go!
FAQ about Chilled Creamy Cucumber Soup
Can I use sour cream instead of coconut milk in the Chilled Creamy Cucumber Soup?
While the original recipe uses coconut milk for a dairy-free version, you can substitute it with sour cream if you're not avoiding dairy. Sour cream will add a tangy flavor and creamier texture to the soup.
Is it possible to replace lime juice with lemon juice in this recipe?
Yes, lemon juice can be a great substitute for lime juice in this soup. It will still provide the necessary acidity and freshness, albeit with a slightly different citrus profile.
What fresh herbs can I add to this cucumber soup for enhanced flavor?
Apart from mint, you can experiment with other fresh herbs like fresh dill, parsley, or basil. These herbs complement the cucumber's freshness and can add a unique twist to the soup's flavor.
Are there other cold soups similar to this cucumber soup that I can try?
Definitely! If you enjoy cold soups, you might also like gazpacho (a Spanish tomato-based cold soup) or vichyssoise (a French soup made with leeks, onions, potatoes, cream, and chicken stock, typically served cold).
Can I add cucumber chunks to the soup for texture, or should it be completely smooth?
The recipe calls for blending the ingredients until smooth, but for added texture, you can reserve some finely chopped cucumber chunks and add them to the soup just before serving. This will provide a pleasant crunch and freshness.
How does this cucumber soup fit into French cooking, and can it be served either hot or cold?
This chilled cucumber soup, with its fresh and light profile, can be a delightful addition to French cooking, particularly as a starter. It offers a refreshing contrast to the often rich and hearty flavors found in traditional French dishes. As for serving, this soup is designed to be enjoyed cold, aligning with the concept of 'gazpacho' rather than hot soups. Its chilled nature is essential to its character, offering a unique and cooling culinary experience.
Can breakfast cereal be used as a topping for this soup to enhance its texture, and how can I ensure it's absolutely delicious?
Adding a crunchy breakfast cereal as a topping to this chilled soup is an innovative idea that can add an unexpected but pleasant texture. Opt for a simple, whole-grain cereal to avoid clashing flavors. For ensuring the soup is absolutely delicious, focus on using fresh ingredients and adjust the seasoning carefully with salt, pepper, and herbs. The quality of ingredients and the right balance of flavors are key to achieving a delicious outcome. Remember, allowing the soup to chill sufficiently will help intensify and meld the flavors beautifully.
