Why you will love these broccoli fritters
These vegan broccoli fritters are perfect for those trying to get creative eating healthier! They're a great way to feed veggies to kids (or adults!) in a sneaky way.
Broccoli makes ⅔ of the ingredients list, making these fritters very rich in vitamins, nutrients and antioxidants. Did you know that one cup of broccoli has the same amount of vitamin C than an orange?
They're super easy to make, all you need is to put the raw ingredients in the food processor, blend until all the ingredients are finely diced, make each pattie and pan fry with a little bit of oil.
Crispy on the outside and very soft on the inside, yum!
Vegan, gluten-free and dairy-free, they're suitable for everyone.
Substitutions and variations for this recipe
Tapioca flour can be substituted for other gluten-free flour like chickpea flour or cornstarch. You could also use all purpose flour, however starchy flours are better suited as they are the binding agent along with the flax egg.
Make a chia egg instead of flaxseed!
Play around with more spices, like ground cumin or cayenne pepper for a hot touch.
You can use a combination of veggies instead of only broccoli. Cauliflower, capsicum and zucchini area great additions.
Tips to make the best vegan broccoli fritters
Pan fry in medium-high heat, to ensure they become soft inside and crispy outside, but without burning them. You could also bake them at 200 degree celsius for 20 minutes.
If prepping to pan fry the day after, I recommend not putting the flaxseeds and tapioca flour in the food processor. Mix these ingredients 15 minutes before you'll pan fry them, and combine with the hands. Otherwise the mix can become dry and the fritters could fall apart when pan frying them.
What to eat with these vegan broccoli fritters
I love eating the rainbow because a plate full of veggies is beyond beautiful! Plus combining foods with different colours, will increase the amount of nutrients and health benefits you get. Here you are some serving ideas for these fritters:
Top it with some sliced avocado, and if you want to go extra fancy try a seaweed salsa like these.
What a better way than eating the rainbow than combining the fritters with this easy mango salsa. The flavours pair beautifully!
Add a poached egg on top, for an extra dose of protein and healthy fats.
Serve with a side of roasted sweet potatoes or green salad if wanting to go low carb!
Make a delicious veggie burger!
Storage
Leftover fritters? Fantastic, they are perfect for a light lunch or dinner! Store in an airtight container in the fridge for up to 2-3 days.
FAQs
Can I Bake the Vegan Broccoli Fritters Instead of Pan Frying Them?
Yes, you can bake the broccoli fritters. Preheat your oven to 200 degrees Celsius (about 400 degrees Fahrenheit) and place the fritters on a baking sheet lined with parchment paper. Bake for about 20 minutes, flipping halfway through, until they're golden and crispy. This method is a great alternative for those who prefer baked broccoli fritters over pan-fried.
How Can I Enhance the Flavor of My Vegan Broccoli Fritters?
To boost the flavor, consider adding garlic powder and onion powder to the mix. These spices complement the natural taste of broccoli and give the fritters a more savory profile. Start with a ½ teaspoon of each and adjust according to your taste preferences.
What Is the Best Heat Setting for Cooking Broccoli Fritters?
For pan-frying broccoli fritters, using a medium heat setting is ideal. This ensures that the fritters cook thoroughly without burning the outside. Keep the heat consistent and adjust slightly if needed to achieve a perfect golden-brown crust.
Can I Add Smoked Paprika to Vegan Broccoli Fritters?
Absolutely! Smoked paprika can add a delightful depth of flavor to your broccoli fritters. It imparts a subtle smokiness and a hint of warmth that pairs well with the other ingredients. Just a sprinkle can make a significant difference.
What Are Some Vegan Alternatives for Adding a Cheesy Flavor to Broccoli Fritters?
Nutritional yeast is a popular vegan choice for adding a cheesy flavor to dishes like broccoli fritters. It's rich in B vitamins and has a savory, nutty taste that mimics cheese. Sprinkle some into your fritter mixture or on top before serving for an extra flavor kick.
For the best results, remember to use high-quality olive oil for cooking, and ensure your chopped broccoli is evenly sized for consistent cooking.

Description
These easy to make vegan broccoli fritters are soft on the inside, crispy on the outside and so tasty! They are great way to eat your veggies in a fun and creative way that the whole family will enjoy! Vegan, gluten-free & dairy-free.
Ingredients
1 medium broccoli head (300 grams) chopped (stem removed)
¼ red onion diced
⅓ cup packed of fresh coriander or fresh parsley
½ cup pepitas
1 small garlic clove finely diced
½ teaspoon of salt
1 teaspoon of ground coriander
½ cup tapioca flour
2 tablespoons ground flaxseeds
Instructions
- In a small bowl put the ground flax seeds with 3 tablespoons of water, let it rest for 10 minutes, to make the flax egg. Prepare the rest of the ingredients in the meantime.
- Add all the ingredients to a food processor and blend until they're all finely chopped. Transfer the broccoli mixture to a large bowl and let it sit for 5 minutes. I use this resting time to do some washing and clear the bench!
- Lightly wet your hands and make the fritters approximately 1.5cm thick and 9cm diameter.
- Set a non-stick pan on medium-high heat with a drizzle of olive or coconut oil. Add the fritters and pan fry around 4 minutes on each side, until they are golden brown, crispy on the outside and soft on the inside. Flip them carefully with a flat spatula so they don't break. Enjoy!
Notes
- Wetting your hands will avoid the mix sticking to your hands.
- These fritters pair great with this easy mango salsa
