Description
These easy to make vegan broccoli fritters are soft on the inside, crispy on the outside and so tasty! They are great way to eat your veggies in a fun and creative way that the whole family will enjoy! Vegan, gluten-free & dairy-free.
Ingredients
1 medium broccoli head (300 grams) chopped (stem removed)
1/4 red onion diced
1/3 cup packed of fresh coriander or fresh parsley
1/2 cup pepitas
1 small garlic clove finely diced
1/2 teaspoon of salt
1 teaspoon of ground coriander
1/2 cup tapioca flour
2 tablespoons ground flaxseeds
Instructions
- In a small bowl put the ground flax seeds with 3 tablespoons of water, let it rest for 10 minutes, to make the flax egg. Prepare the rest of the ingredients in the meantime.
- Add all the ingredients to a food processor and blend until they're all finely chopped. Transfer the broccoli mixture to a large bowl and let it sit for 5 minutes. I use this resting time to do some washing and clear the bench!
- Lightly wet your hands and make the fritters approximately 1.5cm thick and 9cm diameter.
- Set a non-stick pan on medium-high heat with a drizzle of olive or coconut oil. Add the fritters and pan fry around 4 minutes on each side, until they are golden brown, crispy on the outside and soft on the inside. Flip them carefully with a flat spatula so they don't break. Enjoy!
Notes
- Wetting your hands will avoid the mix sticking to your hands.
