    This delicious fresh artichoke dip is ready in less than 5 minutes and it's so delicious! Get ready to impress with this easy and super healthy recipe! Vegan, gluten-free & dairy-free.

    Fresh artichoke dip

    Nothing beats a homemade dip! They're the perfect appetizer: super easy to make, plus much healthier, tastier, and CHEAPER! Unfortunately, most of the store-bought dips have ingredients that I try to avoid in my healthy diet, like preservatives or nasty oils (aka canola oil).

    That's why making your own dips is best, you can control everything that goes in and ensure you're only eating good-for-you ingredients. As a good spaniard artichokes are my favorite thing! So, if you love them too, I am sure you will enjoy this good recipe!

    This creamy dip is made with simple ingredients:

    Fresh artichoke dip
    • Can of artichoke hearts
    • Cashews (preferably soaked in warm water for 1 hour) - see notes
    • Lemon juice
    • Nutritional yeast
    • Extra virgin olive oil
    • Pinch of sea salt

    How to make this delicious artichoke dip

    This is a super easy recipe! So make sure to add it to the list of dip recipes for your next party!

    Add all the ingredients to a high speed blender or food processor, and blend until smooth. Taste, and add an extra pinch of salt if required.

    Serve on a small bowl with a drizzle of olive oil. Optional to add some dukkah, chili flakes or paprika to decorate.

    Tip! This dipping sauce is perfect to serve with crackers, tortilla chips or raw veggies, like cucumber sticks or slices of red pepper.

    Description

    This delicious fresh artichoke dip is ready in only 5 minutes and it's so delicious! Get ready to impress with this easy and super healthy recipe! Vegan, gluten-free & dairy-free. 


    Ingredients

    Scale

    1 can of artichoke hearts (6-7 hearts)

    ⅓ cup of cashews (preferably soaked in warm water for 1 hour) - see notes

    1 ½ tablespoons of lemon juice

    ½ tablespoon of nutritional yeast

    2 tablespoons of extra virgin olive oil

    ⅛ teaspoon of pink himalayan salt


    Instructions

    Soak the cashews in warm water for at least one hour. Drain very well to remove the excess of water.

    Drain the water of the can of artichokes.

    Add all the ingredients to a hand blender and blend until very smooth.

    Refrigerate before serving. Decorate with a drizzle of extra virgin olive oil and dukkah, chili flakes or paprika.

    Notes

    Soaking the cashews is not a must, but will give the dip a creamier consistency.

    Store in an airtight container in the fridge for 3-5 days.
