TRADITIONAL SPANISH TOMATO BREAD "PA AMB TOMAQUET"
Growing up in Mallorca "pa amb tomaquet" or "pamboli" was my favourite thing to have for breakfast. My dad would spoil me and go to the market to get me really good "ramellet" tomatoes and make me the happiest kid on Earth.
It is made with bread, "ramellet" tomatoes, olive oil, salt and sometimes garlic rubbed on the bread too. You can top up the toast with your favourite cured meat, cheese, grilled veggies or avocado. Or just have it by itself, tasty, fresh and simple!
"Ramellet" tomatoes are a small variety of ripe vine tomatoes that we have in Mallorca that are really soft and juicy inside. You cut them in half and rub directly on top of the bread, and end up with just the skin left and all the incredibly flavour-rich flesh on the bread. WHAT GOES INTO THIS VERSION OF "PA AMB TOMAQUET"
"Ramellet" tomatoes are not accessible everywhere which is a shame! But the good news is, there is an alternative way to prepare "pa amb tomaquet" with any kind of ripe tomatoes.
The ingredient list is as simple as: ripe tomato, extra virgin olive oil, salt and oregano (optional).
Please don't let the simplicity of the ingredients make you underestimate this recipe though!

TIPS FOR THIS RECIPE
You might be wondering what tips can I have for such a simple recipe, but let me tell you again, don't let the simple ingredients list make you underestimate this recipe!
With so many years of experience preparing this recipe, I have some wisdom to share with you:
Using ripe tomatoes is key. The ripper & juicer the better! Ripe vine tomatoes are my preference, but you can use any type of tomatoes.
If you prepare ahead, leave the grated tomato in a bowl or container and drain the water before putting the rest of ingredients. Tomatoes release a lot of water, and doing this will make the mix less watery and more flavour-rich.
Extra virgin olive oil can't be substituted for any other oil. This recipe is all about combining simple ingredients together, so using quality ingredients is a must to make them shine!
If adding meat, cheese or other toppings, put the tomato first! This is non-negotiable and might sound obvious 😋 But I still catch my boyfriend sometimes putting the tomato on top of his ham!

Ingredients
1 ripe tomato
2 tbsp extra virgin olive oil
1 pinch salt
1 tsp dried oregano
Instructions
- Cut the tomato in half and grate in a bowl
- Add the rest of the ingredients and mix well to combine using a fork or spoon
- Enjoy on top of toasted bread!
Notes
- You can store in the fridge for up to a week
- If preparing ahead I recommend draining the water the tomatoes release before mixing with the rest of ingredients
