All you need to make this delicious matcha green tea mousse are 4 ingredients:
- Thick canned coconut cream
- Ripe avocado
- Honey or maple syrup
- Good quality matcha powder (a quality culinary grade matcha powder will work)

How to make matcha mousse
Add all the ingredients to a food processor or high speed blender, and blend until very smooth. You can also use a hand mixer and large mixing bowl to make the matcha mixture.
Pour batter to a medium bowl, and let it sit in the fridge for at least 3-4 hours, until you get the right texture. It should be smooth and creamy, but thick enough.
Eat cold! The longer the mousse stays at room temperature the less thick it will become (specially during warmer months).
Hint: you can play around with the amount of matcha powder you want to add, depending how much matcha flavor you like. I recommend starting with 1 tablespoon matcha (as noted on the recipe), and add more progressively if you wish.
How and what to serve with this matcha mousse recipe
This mousse is so delicious you can have it by itself. Dust some matcha powder on top to decorate.
But you can also combine it with other yummy ingredients:
- Fresh fruits - fresh berries are my favourite! Raspberries, strawberries or blueberries work fantastic
- Dark chocolate - either melted or thinly shaved
- Shredded coconut and crushed nuts - also work great
To serve, you can either serve it in a small bowl, serving glasses or plate it with a small cake ring.

Storage
Store in an airtight container or in a covered bowl with compostable cling film in the fridge for up to 4 days.
You can also freeze portions for up to 3 months. To make single portions, freeze it in a silicone muffin tray or cupcake liners, so they're easy to remove.
Top tip to make the best matcha mousse!
A quality matcha powder is key, a good culinary grade matcha powder will work.
Using thick coconut cream is a must. If the coconut cream is very liquid, the mousse will be too runny.
Here you are some tips of how to find coconut cream in the supermarket:
- Shake the can and see whether it makes noise as if thereβd be liquid inside. If it sounds liquid, it wonβt work! If it doesnβt make noise, itβs because itβs thick/solid.
- Check the ingredients list. When a coconut cream has thickeners like guar gum, itβs very likely itβs going to be thick.
Also, once you open the can, remove the cream without stirring the entire can. Sometimes is thick at the top, and liquid at the bottom.
