All you need to make this healthy dairy-free matcha mousse are 4 ingredients and 5 minutes. It is incredibly smooth, delicious and SO EASY to make! It's the perfect recipe for a special occasion or healthy sweet treat.

1 cup of thick coconut cream

1/2 cup of ripe avocado (approx. 1/2 medium avocado)

3 tbsp of honey or maple syrup

1 - 1.5 tbsp of good quality matcha powder (a quality culinary grade matcha powder will work)

  1. Add all the ingredients to a food processor or high speed blender, and blend until very smooth.
  2. Pour batter to a medium bowl, and let it sit in the fridge for at least 3-4 hours, until you get the right texture. It should be smooth and creamy, but thick enough.

  3. Serve cold straight out of the fridge.

Eat cold! The longer the mousse stays at room temperature the less thick it will become (specially during warmer months).

You can also use a hand mixer and large mixing bowl to make the matcha mixture, instead of food processor.

You can play around with the amount of matcha powder you want to add. I recommend starting with 1 tbsp of matcha powder, and add more progressively until you reach the intensity desired.

Play around with the amount of sweetness by adding more honey/maple syrup.

A thick coconut cream is a must to achieve a good mousse consistency!
