Ingredients
All you need to make homemade chicken bone broth are a few veggies, fresh herbs, spices, and animal bones. Not all grocery stores have chicken bones, so you might need to head to your local butcher to find them.
- Chicken feet (free range, hormone & antibiotic free)
- Chicken carcasses* (free range, hormone & antibiotic free)
- Carrots
- Celery (leaves removed)
- Onion peeled (cut in half)
- Garlic cloves peeled
- Fresh ginger
- Fresh parsley
- Bay leaves
- Sea salt
- Peppercorns
- Turmeric (optional)
- Fennel seeds (optional)
- Apple cider vinegar

What are the best chicken parts to make your own broth?
You can use any combination of chicken bones that add up to approx. 1.3kg. I love using mainly chicken feet because they have the most collagen.
Whatever chicken parts you use, I highly recommend using free-range chicken that is antibiotic-free.
Can I use vegetable scraps to make chicken bone broth?
Yes, you can use vegetable scraps to make chicken bone broth, and it's a great way to reduce waste!
Substitutions
- Add more or less spices - the turmeric and fennel seeds are optional. You could also use cumin seeds and star anise.
- Add more veggies - like leek. I find that my slow cooker is not big enough to add more veggies, but go for it if you can!
- Other bones - like chicken wings.
- Use chicken feet only - and don't add the chicken carcass.
How to make your own chicken bone broth
Making this gut healing chicken bone broth requires a long cooking time, but the process is super easy.
Start by roasting the bones: Lay baking paper over a baking tray, and add the chicken feet and carcasses. Roast at 200 degree Celsius for 20 minutes. This step is optional, but in enhances the flavour of the broth.
Add all the ingredients to the slow cooker or pot (I use a 5.5l) : I like to add the bones first. Then add all the veggies, spices and vinegar. Fill the slow cooker with water to the very top. Gently combine, and cover with the lid. Cook in low heat for 24-48 hours (I always do 24 hours).
Discard the solids: remove all the solids from the broth. I remove the big veggies and bones with tongs, and the small solids with a thin strainer.
Let it cool and remove the fat: fill up jars (whatever size is convenient for you) and let them cool. Once it's cool, skim the fat from the top and discard it. You can save it and use it for cooking if you wish.
Hint: this chicken bone broth is super concentrated. I find this works best for storage, as I need less jars, and therefore less space in the freezer or fridge. If you don't want it to be that concentrated, you can add water half way through the cooking time.
For serving, I usually go for approx. ½ broth + ½ water. Add salt and ground pepper to taste.

1 small piece of fresh ginger
Bunch of fresh parsley
2 bay leaves
1 tsp of sea salt

This chicken bone broth is the best!! I stock it in the freezer in the 500ml jars suggested and it works superb for me. I mix it with warm water as you suggest to get more servings out of it. The taste is lovely and it does feel so healthy!
