    These quick and easy sweet potato hash browns are the perfect bread substitute for your breakfast or brunch! Crispy on the outside and soft on the inside, I promise you will love them. Gluten-free & dairy-free.

    Sweet potatoes are just… the best! While I didn’t grow up eating them in Spain, I became a big fan of them when I lived in the UK.

    Their sweet flavour makes them irresistible, and they happen to be very rich in nutrients and fiber.

    These easy sweet potato hash browns are the perfect alternative to the traditional potato version, with the benefit of a few extra nutrients, yay!

    WHY YOU WILL LOVE THESE SWEET POTATO HASH BROWNS

    They are super easy and quick to make. There is no electrical equipment needed, only a grater, a mixing bowl and a pan.

    Dairy-free, gluten-free, and only 5 ingredients required.

    Rich in nutrients and fiber.

    Crispy on the outside, soft on the inside.

    Suitable for pan frying or baking. They're a much healthier alternative to the traditional deep fried version.

    WHAT TO EAT WITH THESE SWEET POTATO HASH BROWNS

    My favourite combo is smashed avo and a runny poached egg on top. YUMMY! But you can get creative and play around with different combinations.

    They make the perfect side dish along with a leafy greens salad.

    Crispy bacon and egg is a winner too.

    Description

    These quick and easy sweet potato hash browns are the perfect bread substitute for your breakfast or brunch! Crispy on the outside and soft on the inside, I promise you will love them. Gluten-free & dairy-free.


    Ingredients

    Scale

    1 cup packed of grated sweet potato

    1 tablespoon of buckwheat flour

    ½ teaspoon of spice mix (cumin, turmeric, ground pepper)

    ⅛ teaspoon of salt

    1 organic egg


    Instructions

    1. Add all the ingredients to a medium size bowl, and mix well to combine.
    2. Add a drizzle of olive oil to a pan on medium-high heat. Add a spoonful of the hash brown mix to the pan, and shape the sides to make them round. Repeat the process until you've used all the mix.
    3. Cook the patties for approximately 3 minutes on each side, or until they're nicely brown. TIP! Press them with a spatula to make them more compact and soft on the inside.
    4. Enjoy!!

    Notes

    • If you prepare the mix ahead, store it in the fridge in an airtight container for up to 3 days (the sweet potato will oxidate a bit).
    • You can also cook them and store the patties already made in the fridge in an airtight container. Either eat cold or warm up in a pan or microwave.
    • Play around with the spices if you wish!
