    This simple cheesy turmeric quinoa makes the perfect side dish, or base for salads and stir fries. Made with only 4 ingredients and ready in 12 minutes! Vegan, gluten-free & dairy-free.

    Cheesy turmeric quinoa

    I love quinoa! This small gluten-free seeds, are not only delicious but also packed with fiber, iron, vitamin B and complete protein. YES! Quinoa is a complete plant-based protein, meaning it has all nine essential amino acids.

    This cheesy dairy-free turmeric quinoa is perfect to make the quinoa flavour a bit more interesting, add nutrients and yep, make it more colourful thanks to the turmeric!

    It only takes a few extra additions to the normal process of boiling quinoa, and the result is so worth it! Make sure to add some crushed pepper before serving to boost the turmeric absorption.

    I would normally prepare it in advance, so I have it ready to go to add to my salads or stir fries. It can last up to 5 days in the fridge if store properly in an airtight container.

    Description

    This simple cheesy turmeric quinoa makes the perfect side dish, or base for salads and stir fries. Made with only 4 ingredients and ready in 12 minutes! 


    Ingredients

    Scale

    1 cup of white quinoa

    ⅛ teaspoon of ground turmeric

    ½ teaspoon of stock powder or ½ cube (low in salt)

    2 tablespoons of nutritional yeast


    Instructions

    1. Bring 2 cups of water to boil. Once it’s boiling add the stock powder or cube, turmeric and quinoa. Reduce the heat to medium and cover for 10 minutes or as per package instructions.
    2. Once most of the water has been absorbed, add the nutritional yeast and stir to combine. Cover for another minute and ready!

    Notes

    • Store in an airtight container in the fridge for up to 5 days.
    • Add crushed pepper on top before serving to boost the turmeric absorption
