    Apple berry crisp (vegan)

Apple crumble takes me back to childhood, my mum would make it and I loved it so much! The delicious sweet flavour of baked apples is hard to beat. That's why I had to create a delicious healthier version. And for another healthy baked treat, try this healthy blackberry cobbler.

Because I love healthy desserts; I can’t help it! They make me finish my meals happier haha 😊 Whether it’s an indulging chocolate tart like me vegan no-bake chocolate tart or a bite-size dessert like my matcha coconut balls.

How to make this apple berry crisp

Making this vegan apple berry crisp is ridiculously easy. Let me show you!

    Apple berry crisp step 1

Preheat the oven to 180 degrees Celsius in top and bottom baking mode.
Start by making the crust. Add all the ingredients to a large mixing bowl, and combine well with your hands. The mix should be slightly wet.

    Apple berry crisp step 2

Prepare the apples, and put in a large mixing bowl. Add the cinnamon and lemon juice, and combine well with your hands.

    Apple berry crisp step 3

Grease a ceramic baking tray with coconut oil. Add a layer with approximately half the apples. Then put the berries in the middle, and cover with the rest of the apples. Pour the crust mix on top to cover the entire surface. Spread and pack with a rubber spatula.

    Apple berry crisp step 4

Bake for 20-25 minutes in the oven and enjoy!

Hint: check after 15 minutes to make sure it’s not burning. If you see the top is starting to burn, set the oven to heat on the bottom only.

    Substitutions

    • Coconut sugar – instead of maple syrup.
    • Use other nut flour – instead of almond flour, it will work great as well.
    • Skip the berries – if you rather make apple crisp only! Add an extra apple if this is the case.

    Equipment

    • Large mixing bowl
    • Ceramic baking tray
    • Knife, peeler and rubber spatula
    • Teaspoon & tablespoon measurer

    Storage

There’s nothing better than opening the fridge and having some leftovers of this delicious paleo apple berry crisp!

Store in the fridge covering with a wax wrap, or in an airtight container for up to 5 days.

    Top tips!!

Adjust the amount of coconut oil if the crisp mix ends up too dry when you’re mixing it.

Check the oven after 15 minutes, to make sure the top it’s not burning!! Set the baking mode to bottom only, if the top is starting to burn.

What to serve with this apple berry crisp

I love serving this apple berry crisp with a dollop of coconut yogurt on top! You can go for ice cream if you feel like an extra treat 😊

    FAQ

What's the difference between apple crumble and apple crisp?

The apple crisp topping is made with nuts and seeds, or in this case shredded coconut; as opposed to the traditional crumble which is made with sugar, flour and butter. The apple crisp topping is high in healthy fats and low in carbs.
