Description
This Mediterranean butter beans salad couldn't be easier to make! Made with raw ingredients, it's ready in 10 minutes and packs so much flavour. Vegan, dairy-free & gluten-free.
Ingredients
SALAD
1 can of butter beans
1/2 cup of red capsicum finely diced
1/2 cup of green capsicum finely diced
1/3 cup of purple onion finely diced
1 tomato sliced
2/3 cup of parsley chopped
1/4 cup of sliced kalamata olives
DRESSING
2 tablespoons of EVOO
1 tablespoon of apple cider vinegar
1 tablespoon of wholegrain mustard
Instructions
Add all the salad ingredients to a large bowl, and mix well to combine.
Prepare the dressing and add to the salad.
Enjoy cold!
Notes
- Store in the fridge in an airtight container for up to 5 days.
- TIP! If preparing ahead, don't add the dressing until before eating, to ensure the veggies stay fresh.
