Description
This crunchy & healthy chocolate granola it's super delicious and easy to make! Ideal for smoothie & yogurt bowls, or simply to snack! Gluten-free, oats-free & refined sugar-free.
Ingredients
Wet mix
- 1/8 cup of coconut oil
- 2 tbsp of honey
- 1/2 tsp of cinnamon
- 2 tbsp of raw cacao (fair trade)
- 1/8 tsp of vanilla
- 1 egg white beaten
Dry ingredients
- 1 cup of puffed rice
- 1/2 cup of pepitas
- 1/2 cup of crushed almonds
- 1/2 cup of shredded coconut
Instructions
- Preheat the oven to 180 degrees Celsius on top and bottom baking mode.
- Add all the wet mix ingredients (except the egg white) and mix well to combine with a whisk. Add the egg white and mix well again.
-
Add all the dry ingredients to a large mixing bowl, & pour the wet mix on top. Mix well to combine all the ingredients using a rubber spatula.
-
Lay a baking tray with baking paper. Pour the granola mix, and tightly pack until it's approx 1/2 cm thick. Bake for 20 minutes at 180 degrees Celsius in baking mode.
-
Turn off the oven. Let the granola cool down in the oven with the door open. Once it's completely cool, break down into small clusters, and store in an airtight glass jar.
Notes
- Be mindful of the oven temperature! This is my biggest tip because I learnt the hard way (yep, I’ve burnt a few trays of granola in the past and it was devastating).
- I use the baking mode top and bottom and 180 degree Celsius for 20 minutes. If you are unsure, go for a lower heat setting to be safe.
- Always check the oven after 10-15 minutes to make sure it’s roasting but not burning.
