This quick & easy vegan creamy mushroom pasta ticks the box of healthy comfort food that tastes like a treat. With a short and simple ingredients list, it's ready in less than 40 minutes!



4 garlic cloves diced

1 medium brown onion thinly sliced

9 cup mushrooms sliced

2 cups of spinach

300ml coconut milk

3 tbsp nutritional yeast

Salt to taste

140g of GF pasta of your choice


  1. Add a tablespoon of coconut oil to a pan on medium heat. Start by cooking the onion and the garlic with a bit of salt. Cook for aprox. 20 min until the onion is nicely golden brown.
  2. While the onion is cooking, start boiling the pasta as per packet instructions.
  3. Put the onion on the side of the pan, rise the heat to high, and add the mushrooms. Add more coconut oil if needed and a pinch of salt. Cook for aprox. 5 mins until the mushrooms are cooked.
  4. Combine the mushrooms and onion, and add the coconut milk, nutritional yeast and spinach. Cook for another 5 min until the spinach are soft.
  5. Add the boiled pasta, combine with the sauce for 2-4 minutes, and enjoy!


  • Before adding the pasta, taste the sauce to see if you'd like to add a bit more nutritional yeast, for an extra cheesy flavour.
  • If you want to cook this recipe in 15 minutes only, skip the onion!
