Description
This quick & easy vegan creamy mushroom pasta ticks the box of healthy comfort food that tastes like a treat. With a short and simple ingredients list, it's ready in less than 40 minutes!

4 garlic cloves diced
1 medium brown onion thinly sliced
9 cup mushrooms sliced
2 cups of spinach
300ml coconut milk
3 tbsp nutritional yeast
Salt to taste
140g of GF pasta of your choice
Instructions
- Add a tablespoon of coconut oil to a pan on medium heat. Start by cooking the onion and the garlic with a bit of salt. Cook for aprox. 20 min until the onion is nicely golden brown.
- While the onion is cooking, start boiling the pasta as per packet instructions.
- Put the onion on the side of the pan, rise the heat to high, and add the mushrooms. Add more coconut oil if needed and a pinch of salt. Cook for aprox. 5 mins until the mushrooms are cooked.
- Combine the mushrooms and onion, and add the coconut milk, nutritional yeast and spinach. Cook for another 5 min until the spinach are soft.
- Add the boiled pasta, combine with the sauce for 2-4 minutes, and enjoy!
Notes
- Before adding the pasta, taste the sauce to see if you'd like to add a bit more nutritional yeast, for an extra cheesy flavour.
- If you want to cook this recipe in 15 minutes only, skip the onion!
