Description
This no-fuss chocolate balls recipe is the answer! These bite-sized chocolate truffles are rich, healthy, delicious, and addictive! Warning, they disappear fast!
Ingredients
- 1/2 cup of canned coconut milk or cream
- Zest of 1 orange - wash very well before grating
- 1 tbsp of espresso decaf
- 1 tbsp of liquor (optional) - I use cognac, rum, or whiskey would work well too
- 250 grams of dark chocolate - minimum 70%
- Raw cacao powder for coating
Instructions
- Chop the chocolate into small chunks — for easier melting.
- Heat the coconut milk in a small pot over medium heat until it just starts to bubble. Add the orange zest, coffee, and liquor. Stir well to combine.
- Lower the heat to very low, and add the chopped chocolate. Stir constantly until fully melted and smooth.
- Chill the mixture in the fridge (or freezer) until firm enough to roll.
- Line a tray with parchment paper. Pour some raw cacao powder into a small bowl or plate for coating.
- Scoop and shape the truffles: Use a small spoon to scoop out portions and roll into bite-size chocolate spheres using your hands. It will get messy, especially in warm weather, as the chocolate will melt quickly at room temperature. Place the small balls on the wax paper.
- Coat the rolled balls in the raw cacao powder by rolling them gently until fully covered.
- Freeze the truffles on the prepared tray, until solid. Transfer them to an airtight container or freezer-safe bag for storage.
Notes
Orange zest - Be mindful of grating the skin just once on the same area, to avoid grating the white part, as otherwise it'll give a bitter flavor.
Liquor - while it’s an optional ingredient, I highly recommend adding it—it gives the truffles a rich, aromatic depth that takes them to the next level.
Melt the chocolate on very low heat – Take your time with this step. Chocolate burns easily and becomes grainy if overheated. Set the stove on very low heat and stir often, to keep it smooth and glossy.
Combine the chocolate mixture thoroughly with a whisk – Make sure all the ingredients are well incorporated. Whisking helps emulsify the mixture and prevents clumps of unmelted chocolate or uneven texture in your truffles. Smooth, consistent batter = perfect bite every time!
